Organic Butter Beans are large, creamy-textured white beans with a mild, buttery flavour that makes them especially good at soaking up other flavours in a dish. They're a Mediterranean and Middle Eastern kitchen staple, equally suited to slow-braised stews, garlicky bean mash, or tossed cold into a herby salad with olive oil and lemon. As with most dried beans, they benefit from soaking for at least eight hours, or overnight, before simmering until soft and tender.
